Good guesses but no

I am stuck between a rock and a liquid place

Water?

a boat or water craft of a sort???

Maybe

its some type of musical instrument...like piano or harmonium

my guess would be

a rainbow...

many rainbows happen in mountains where it rains, it is only visible with the sun behind, and it runs in rivers but when a river runs over a cliff you see a rainbow in the mist, all for a pleasure to your eyes

so far

rainbow

but my guess is

bat, like a flying fox, speaks in peaks, measures mountains of various sizes, when the sun coms out - hides, runs in river-(dunno if they do that), but if they have me and then let go of me, its surely will be my pleasure, what say?

rainbows may be a decent guess but you need to think of chromophores.... its all chemistry dear watson... think outside of the particle in the box

Hopefully this hint will help you all out....

An HPLC chromatogram

Sorry I guess this one was too hard with it being very interest/profession specific. Sorry for the bad riddle. Thought it was good since i had everyone at work reeling from it.

wavelength is getting closer but not quite close enough

Think outside of the particle in the box

It might be "Rainy clouds"

The only confusing part here is "I run in rivers". Though yes.. its reflection might run in the rivers..
