I was just about to post this, when I saw Williebear had just posted it and you denied it as the solution.

Grouper (Red Grouper, White Grouper, and Blue Grouper)???

As to the riddle 'style', am I correct in...

The clue is a 'cryptic crossword'-like clue, with the word "off" hinting that the other letters are "out of place", i.e., an anagram? E.g., "Turn keys to shear" comprises the letters for oyster (as it does shark, ray, skate and a few other fishes)

That's what I was working on, too ("southern Hake" was the closest I could get. "turn" could also imply an anagram.

are sound-outs.

There are several types of clams ending in 'neck' (littleneck, longneck, shortneck, topneck, pinkneck), there are also a few razors. Due to the list of '*necks' the clam may belong to clue 11, yet due to the 'razors', the clam may belong to clue 12 ("...to shear off"). As to the oyster, the only common names I found that do not include the word 'oyster' are bluepoint and tio, or of the oyster-related 'scallop', pure and tipa. And I found nothing in the short list, with or without 'oyster'/'scallop' that strikes me as fitting either clue.

11. What might be considered 'spice'? What common object(s) might have a neck? Find the right words/sounds, string them together to get the answer.

12. Two parts, the same word, which sounds like the answer.

Still looking for fish.

poll : (verb) to cut off or trim (wool, for example) "to shear off"

lock : (verb) to secure (with a device by turning a key) "turn keys"
