Look at the forest (euphenism for fireworks display?) from the trees

Go on up and catch the breeze (watch display)

Hint could be a description of the celebration

Fireworks are nice, but loud & hard on the ears

Pack up the gear

Celebration lasts for a week, so everyone is in the streets celebrating, taking food, noisemakers, costumes, etc.

Racing?

Kentucky (Derby) & S Carolina (boat racing)

though only partially wd fit

though far more than two(not the only states that host racing events) & common enough for anyone to see them

Mortar and plaster and sandy water (can refer to stables or the sea)

The carrier prone to slaughter (most horses or boats are beaten in a race)

Look at the forest from the trees (euphenism for stands & racers, resp.)

Go on up and catch the breeze enjoy the spectacle)

Extra hint cd refer to announcer on loudspeaker, packing up the gear cd refer to the participants of the race

A tunnel?

South Carolina and Kentucky you can get the word "tunnel" from both states)

Though only partially (only part of SC & KY)

Yet far more common than two (there are lots of tunnels)

Common enough for you to see them too (we've all seen the inside of one)

Mortar and plaster and sandy water (tunnels are made out of the first & usually go under a river bed or bay, which usually have sandy bottoms)

The carrier prone to slaughter

Look at the forest from the trees (the last 2 line I think refer to emerging from a tunnel)

Go on up and catch the breeze

Pleasant can be the first thought (refers to a train?)

But when heard...well, we'd rather not (they can be noisy)

Come on, go and pack up the gear (last 2 lines can refer to train approaching a station from a tunnel)

Call into the streets for all to hear
