68. You take away the smallest number found between the two end numbers, then flip everything. On the last 3 digits, you take away the 7 at the middle, then flip 8 and 6 to become 68.

I accept that sak_lko intended the answer to be

However, I maintain that if instead of removing the smallest number, we remove the second number from the left (which is consistent with what was happening in the "series"), then it could be interpreted that a perfectly acceptable answer would be

I think you can also claim that the removed numbers create a series in which each number is twice the size of the previous number. 2,4, and the next number will be 8. Leaving us with 67.
