I get the feeling this isn't a typical "what am I" type.

only the suspicion that, given the title, the first line might be "fare/fair". But I've got nothing on the others

All lines point to the word "Fare"

Pay the price

Fare: What you pay to ride (bus, taxi, etc.)

And you become

Fare: Which you then are to the driver

What you eat

Fare: The typical food (Mediterranean fare, etc.)

As you proceed

Fare: How do you fare/How are you doing/How are you getting on?

& the title: Impartial is a synomym of Fair, which is a homophone of Fare
