Dilemma of the day: How much cocoa powder should I use in my non-dairy mocha drink formulations? Guess I'll find out tomorrow when I taste them if I guessed right.

Working in a nut-house (per se), as I do, we try to promote our products. So, dairy-replacement products are things I work on sometimes. And for those keeping score, they need more coffee & more cocoa, but the sugar & vanilla amounts are good. Still have to tweak the hydrocolloids more though.

Got no kitchen. Do have ugly a-- 1960's linoleum to get rid of. New floor & appliances arriving soon, which will sit in the garage with the rest of the new kitchen.
