The rider comes on airy horse.
Savage signals warn in beat

i thought airy horse and winged beat would be peasus so i found a place called pagasus town (not joking)
i dont think that is it but could you tell me if im on the right track with pegasus

Ladies and Gents, please note the quotes around the last word. This is a tricky riddle and almost everything in it is a metaphor.

The message comes, it doesn’t stop. - the ride lasted until it terminated in lexington
Cross bridge and ‘long the watercourse - paul revere went across the river while his accomplice, dawes, took the land route that crossed a bridge
The rider comes on airy horse. - both dawes and paul revere rode horses
Savage signals warn in beat - they yelled the news of the british coming and the signal of the fire could be called 'savage' because fire can be quite savage
That soon the maker they will meet! - the minutemen would soon attack and kill the british
So Sooty Smith plies his trade. - paul revere was among other things a silver smith
See the cowboy mount! - he was a jack of all trades but idk about cowboy
